You are warmly invited to come by COSMO and exchange ideas with me to learn more about the exhibition “Bacteriopolis – Tiny City Full of Bacteria”. Who are you? I am Pia Bethge, a food chemist and doctoral candidate in the field of food microbiology. Where do you work? I work at TU Dresden as a research associate at the Chair of Biology of Complex Systems (Center Synergy of Systems). What are you working on? In my doctoral thesis, I focused on water kefir. This is a fermented drink produced by a living community of microorganisms. I was particularly interested in how the kefir grains are structured and how they grow and reproduce. In my current work, I am investigating where water kefir is distributed throughout Germany and why this “invisible flatshare” of bacteria and yeasts is so stable and how it has developed over time. What can one talk to you about? Feel free to approach me if you are interested in water kefir and fermentation, or if you want to learn more about food, microorganisms, and complex systems in general. I am also happy to provide insights into studying and my daily work as a scientist. What is “Researchers Up Close” about?
